English: Hom daeng (Thai script: หอมแดง) is the Thai name for shallots. Shallots, not onions, are essential for Thai cuisine. This photo was made at a small shop along the north moat of Chiang Mai that is specialised in khao soi, a spicy curry and coconut milk noodle soup; it sells the Tai Yong (one of the Tai peoples in northern Thailand) version of khao soi. Shallots are essential in making any Thai curry paste and with khao soi, raw, sliced shallots are also served on the side.
